Creamy Coleslaw
Ingredients: one medium head of green cabbage, one small head of red cabbage, four carrots, one medium onion, four cloves
of garlic, 1/8 cup of salt, 1/2 cup of whole milk, 1/4 cup of cider vinegar, 1/4 cup of sugar, 1/2 cup of mayonnaise, two teaspoons of
dried mustard, one teaspoon fresh ground pepper and salt to taste.
Directions
:
Finely shred or dice your cabbage and carrots. Additionally,
mince your onion and garlic. Set all vegetables into a large
bowl.
Mix in the salt. Allow mixture to sit for at least one hour in
the refrigerator, or up to three hours with a weighted plate on
top of the vegetables.
Remove vegetables from the refrigerator and place them
into a colander. Rinse and allow excess moisture to run into
the sink as you make up your dressing.
Combine the milk and vinegar, allow to sit for fifteen
minutes and congeal. In a large bowl, combine the milk
mixture and the remainder of your ingredients, whisking to
bring everything together into your dressing.
Place your drained vegetables into the dressing, and stir to
combine. Add additional salt and pepper as needed. Serve
immediately, or shortly thereafter.
Zucchini Fries
Ingredients: One zucchini, 1/2 cup of milk, one large egg, 1/2
cup of Parmesan cheese, one cup of panko bread crumbs, one
teaspoon black pepper, 1/2 teaspoon salt and cooking spray.
Directions:
Preheat your oven to 425 degrees. Line a baking sheet with
foil and lightly coat with cooking spray.
Using a vegetable peeler, remove the outer layer of the
zucchini. Cut the stem and end off, split the Zucchini lengthwise.
Scoop out any seeds or pulp that may be in the middle. Cut
your zucchini into sticks about three inches long, 1/4
″
thick, and
set aside. In a small bowl, whisk together your egg and milk. In
another bowl, combine your parmesan, bread crumbs, pepper
and salt.
Taking one zucchini stick at a time, dunk into milk mixture
and then follow up with a hefty coating of the parmesan mixture.
Lay flat onto baking sheet and continue with the remaining fries,
leaving about a 1/2
″
of space between each one. Depending on
how big your zucchini is, you may need to prep a second baking sheet.
Place pan(s) into oven and cook for about fifteen minutes, or until the bottoms start to brown. Using a set of tongs, flip the fries
and continue baking until those sides are browned as well, another 5-10 minutes. Remove and serve immediately!
You can’t go down centerline, jump the jumps or gallop on
cross-country day without the support of your equipment. Think
about your saddle, it holds you in place and you probably wouldn’t
be competing without it. Yet aside from when we purchased it, we
don’t really “honor thy saddle.”
At dinner, a roast without mashed potatoes would just be
a steak. While you can serve up a hunk of meat, it’s hard for a
meal to reach it’s full potential without add-ons that make it shine.
You might also find that those side dishes help to enhance your
experience with all those additional flavors.
Everything should have its own day in the spotlight and be
recognized for the uniqueness and ability to support the end results
produced. This is the reason why I wanted to bring forward some
of my favorite sides that ought to be remembered more readily as
they help enhance a meal and stand on really solid footing. We
have Zucchini Fries, healthier than fried potatoes and packed with
a ton more flavor. And then we also have Creamy Coleslaw, a
bright salad with a luscious Southern inspired dressing that turns
purple the longer you let it sit.
All I can say to everyone is, “honor your sides” and don’t forget
to appreciate the thing that keeps your bum glued to your horse.
